Potato Pancakes Recipe

Ingredients

2 eggs

1/2 cup butter, softened

1 cup packed white sugar

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon baking powder

1 cup coarsely chopped potatoes

2 cups vegetable oil for frying

Directions

In a large bowl, beat eggs and butter until thick. Mix in sugar and flour, then mix with the egg mixture. Mix in baking soda, salt, baking powder and potato, then mix with the flour mixture.

Heat oil in deep fryer to 375 degrees F (190 degrees C).

Fry the pancakes in 1/4 cup vegetable oil in a little at a time until golden and crisp, about 6 to 10 minutes. Drain on paper towels.

This is really good. I substituted plain old steak for the quinoa, and baked potatoes for the lentils, and it came out pretty darn good. Would make it again.
