1 cup fresh blueberries
2 cups sifted all-purpose flour
1/4 cup white sugar
1 tablespoon orange zest
1 cup flax seeds (optional)
1 pint fresh blueberries
1 cup crushed pineapple, juice reserved
2 teaspoons molasses
1/2 teaspoon vanilla extract
Mix blueberries, flour, sugar, orange zest and flax seeds in large bowl. Mix blueberries with orange juice, molasses, pineapple juice and molasses; set aside.
Stir blueberries into yeast mixture, then stir in pineapple, molasses and vanilla.
Stir blueberry mixture into yeast mixture, then add blueberries and pineapple juice. Turn red circles of dough over and roll into thick balls. Place on ungreased cookie sheet.
Bake at 375 degrees for 1 hour or until bubbles of lemon-lime soda float to the top of the crust. Cool completely. Serve immediately with blueberry jelly.
I can't say enough good about this recipe! I'd recommend adding only 1 g of Flax seed, because my neighbor happened to have some Raisins and that was perfect! I didn't add the Melinda, but I believe that by adding the Raisins, it'll make a better gluten free alternative! YUMMY!
