1/3 cup milk
1/3 cup butter
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon margarine
1 teaspoon white rum
8 cups oatmeal, room temperature
1 cup chopped pecans (optional)
In a large saucepan heat milk, butter and sugar. Bring mixture to a quick boil. Remove from heat, and stir in vanilla and eggs until well blended.
Cook over medium heat until mixture thickens. Remove from heat, and stir in margarine, rum, oats, pecans and pecans if desired. Allow pudding to cool to room temperature before serving.
