1 pound beef roasts
4 teaspoons liquid smoke cracker/powder shaker
1 cup finely chopped onion
1 cup diced celery
1 cup chopped tomatoes
salt and pepper to taste
1/2 cup butter
1/4 cup dried horseradish
Place beef roasts on a large heavy pan, in a broiler pan, or in a cast iron skillet. Roast three hours on medium heat. Boil remaining cooking time. Remove the meat from the roasting pan and sprinkle with salt and pepper to taste. Place another pan over top of the roasting pan (in the center) and broil an additional hour.
