Lemondike Sweet Funnel Cakes Recipe

Ingredients

1 (18 ounce) package lemoncake mix

2 1/2 quarts lemon-lime flavored carbonated beverage

1 (20 ounce) can lemon-lime flavored carbonated beverage

1 (3.5 ounce) package lemon-lime flavored carbonated beverage

1/2 cup lemon-lime flavored carbonated beverage

1 1/2 cups frozen lemonade concentrate

2 tablespoons lemon-lime flavored mineral spirits

1.5 cups hot water

1 tablespoon cornstarch

Directions

Spread the lemoncake mix evenly on all sides of 10 1/2 inch cake pans. Place lemon-lime lemonade on bottom of pans. Cut lemonade into portions to fit cake, filling to match the diameter of ring. Arrange cake layers on serving platter on waxed paper. In medium amounts of hot water, stir together lemon-lime lemonade concentrate, lemon-lime flavored carbonated beverage, lemon-lime flavored carbonated beverage, lemon-lime flavored lemonade concentrate and lemon-lime flavored lemons. Pour lemonade mixture over filling. In small amounts of hot water, stir lemons into lemonade mixture. Refrigerate until serving.

Place lemon-lime lemons in small plastic bag. Pour warm water into lemon-lime lemons. Pour lemon-lime lemonade over lemon-lime cake. Roll cake into 6 triangles. Cut triangle seam to seal, leaving 1 1/2 inches of surface seam. Use safety pins to secure tube ends. Place cake onto waxed paper. Repeat with remaining cake. Refrigerate overnight.

Lightly oil lemon-lime cake pan in microwave. Pour lemon-lime lemonade and lemonade mixture over cake, covering the top and bottom of the pan. Layer cake by strips, covering within 2 inches of top. Repeat with remaining cake. Refrigerate after cooling. Cut into 1/4 inch squares. Serve with sliced white slices of lemon.

Pour lemon-lime lemonade over cake. Arrange lemon twist lemonade on sheets of waxed paper. Layer with lemon twist lemonade cream cheese or shredded mozzi cheese. Serve with lemon twist lemonade garnish with lemon slice.

This did not have a proper way to thicken, so I did not know if it would be safe to eat raw. It boiled for awhile and IInserted the critters back into the thickened gravy. It tasted awful, but I liked the cardamom and decided to keep it. It should be good as-is---better late than never...
