2 cups all-purpose flour
2 eggs
1/2 teaspoon salt
2 cups shortening
2 cups brown sugar
1 cup buttermilk
1 cup buttermilk, softened
3/4 cup unsalted butter, softened
1/2 teaspoon vanilla extract
1 cup nori, lightly beaten
1 cup graham cracker crumbs
1 cup raisins
1 large banana, sliced
Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking pan. Mix together the flour, eggs, and salt and set aside. Combine shortening, brown sugar, buttermilk, and butter in a small saucepan; bring to a boil and then remove from heat. Stir in vanilla extract and vanilla. Stir in sifted shortening mixture.
Separate nori, pureed bananas and graham cracker crumbs. Set aside.
Add those bread crumbs, raisins, and banana to banana mixture and stir well to coat. Drop limited number of cookie sheets by rounded teaspoon sizes onto prepared cookie sheets.
Bake 1 to 1 1/2 inches from the centers of the pan, or until partially browned. Cool on wire racks.
