1/2 cup butter, softened
8 ounces white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/3 cups whole wheat flour
1/4 cup whole wheat flour
1 egg
1/4 cup white sugar
2 teaspoons vanilla extract
1/2 cup chopped walnuts
Melt butter, sugar, flour and baking powder in a 9x9 inch pan. Set aside.
In a large bowl, mix oats, pecans and coconut, and set aside. Stir together the flour, sugar, flour and baking powder. Stir the egg into the flour mixture until well blended, then fold in the salt, pepper and whole wheat flour. Fold into the mixture until evenly blended. Immediately spread butter mixture onto a large baking sheet.
Bake in preheated oven for 1 hour, or until very lightly golden. Flip and continue to bake for another 30 minutes, until golden. Cool completely before cutting into squares. Cover and store in an airtight container.
