1 (18.25 ounce) package Oatmeal Cookie Mix
2 teaspoons vanilla extract
1 cup white sugar
2 eggs
1 cup vegetable oil
1 teaspoon ginger extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
3 cups milk
2 teaspoons hot water
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, mix Oatmeal Cookie Mix, vanilla extract, sugar, eggs, oil, ginger, flour, baking powder, baking soda and vanilla extract. Mix well. Fold in milk and hot water. Drop 1/2 of the mix onto the prepared cookie sheets.
Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes in the preheated oven, until browned. Allow to cool completely before transferring to an electric cookie cutter.
