1 1/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1 cup butter, softened
3 eggs
2 teaspoons vanilla extract
1 1/2 teaspoons vanilla extract
1/2 cup nonfat milk
1 1/2 teaspoons vegetable oil
1/2 cup all-purpose flour
In a large bowl, combine the flour, baking powder and salt. Fold in the butter, egg, and vanilla. Cover, and let stand overnight.
Meanwhile, preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Spread batter in small, square baking dish, about 4 inches square. Place batter in prepared pan.
Bake in preheated oven until a toothpick inserted into center of muffin comes out clean, about 30 minutes.
