1 1/2 cups whole wheat flour
1 1/2 cups corn flour
6 tablespoons baking powder
1 tablespoon white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 egg
1/4 cup vegetable oil
1/2 cup white sugar
1/4 teaspoon baking powder
1 cup packed brown sugar
1/4 cup butter
1/4 cup milk
1/2 teaspoon vanilla extract
1 cup white sugar for decoration
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 2 baking sheets. Stir together the whole wheat flour, corn flour, baking powder, white sugar, baking soda, salt and cinnamon. Add the eggs, oil and 1/2 cup white sugar: create a well in the center of the dry ingredients and pour flour mixture over. Mix lightly. Press mixture into the prepared pan.
Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Meanwhile, remove pan and let cool completely. Gently brush marinade over loaf.
In a medium bowl, combine 1/2 cup white sugar, brown sugar, butter and milk. Mix well. Spread over bread while still warm. Arrange peach slices across the top. Refrigerate for at least 2 hours.
While loaf is chilling, roll out peach slices to form a diamond shape. Collapse peach slices and spread peach slices over loaf. Place peach slices on top of peach slices and drizzle remaining marinade over peach slices.
