2 cups shredded Swiss cheese
1 cup sliced fresh mushrooms
1/8 cup Italian-style dressing
1/4 cup sherry
1/8 cup red wine vinegar
1/4 cup chopped fresh spinach
2 tablespoons grated Parmesan cheese
2 tablespoons fresh lemon juice
In a medium saucepan, combine Swiss cheese, mushrooms, Italian dressing, sherry, vinegar and spinach. Bring to a boil and reduce heat. Cover and simmer for 30 minutes.
Remove the meat mixture from heat; stir over medium heat until melted and well coated. Serve quickly.
