2 tablespoon olive oil
1 small yellow onion, diced
1 medium sweet onion, chopped
1 medium sweet bell pepper
2 teaspoons honey
2 cups shredded Cheddar cheese
1/2 cup unsalted, unpeeled pepper jack cheese
2 tablespoons chopped fresh parsley
Heat olive oil in a medium skillet over medium heat. Add onion, and saute until golden. Add bell pepper, onion, onion, bell pepper, honey, zucchini, parsley, and cheese. Sprinkle with oregano and pierce with a fork. Cover skillet. Cook until thermometer reads 165 degrees F.
Return skillet to medium heat. Add pepper jack cheese, cheese mixture, parsley, oregano and pepper sauce. Reduce heat to low, and stir. Cook 15 minutes.
