2 cups butter
1 1/2 cups white sugar
1/2 cup corn syrup
1 1/2 cups boiling water
1 cup packed brown sugar
1/2 cup fresh lemon juice
1 (24 ounce) can mandarin oranges
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.
In a large mixing bowl, cream together butter and sugar until smooth. Beat in corn syrup and boiling water. Beat into butter mixture slowly, stirring just until incorporated. Mix in brown sugar, lemon juice and orange zest; stir well. Pour into prepared pan.
Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before frosting. Frost top with ginger icing. Garnish with black licorice, cinnamon or maraschino cherries and chopped pecans.
