2 pounds potatoes
1/2 cup butter
1 1/2 teaspoons salt
1 cup brown sugar
1/4 teaspoon ground black pepper
1/2 cup olive oil
1/2 cup chopped onion
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon zest
3 tablespoons all-purpose flour
In a large bowl, toss together potatoes, butter, salt, brown sugar, black pepper, olive oil, onion, milk, vanilla extract, lemon zest and flour. Shape into 4 rolls.
Bake at 375 degrees F (190 degrees C) for 10 or 15 minutes, or until tender. Cool before serving.
