5 tablespoons olive oil
2 cloves garlic, minced
1 large onion, diced
2 large red chilies, cut into 1/2 inch chunks
1 pound beef chuck
3 (16 ounce) cans tomato paste
2 (14.5 ounce) cans beef broth
1 (14.5 ounce) can kidney beans
1 (1 pound) loaf pita bread, cut into 1 inch cubes
In a large saucepan, heat olive oil over medium heat. Stir in garlic and saute for about 1 minute. Stir in onion and red chilies. Immediately bring to a boil, stirring. Reduce heat to low, and cook for about 10 minutes, stirring occasionally.
Stir in the meat chunks and tomato paste. Reduce heat, and stir in beef broth. Bring to a boil. Reduce heat to low, and cook for about 1 hour, stirring occasionally.
Stir in beans and pita bread cubes. Bring to a slow boil, reduce heat to low, and cook for about 20 minutes, stirring occasionally.
