1/4 cup butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
1 (18.25 ounce) package strawberry flavored Jell-O mix
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans. Mix together butter, Brown Sugar, vanilla and gelatin; set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the gelatin, peach schnapps and vanilla; stir into the creamed mixture until well blended. Pour batter into prepared pans.
Bake in the preheated oven for 15 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool cake completely.
