1 1/2 cups quick cooking oats
1 cup butter
1 cup all-purpose flour
1 teaspoon baking soda
1/3 cup butter, chilled
2 teaspoons vanilla extract
1 cup milk
2 eggs, beaten
Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round cake pans.
In a large bowl, stir together the oats, butter, flour, baking soda and oats until evenly coated. Beat in the milk and eggs. Roll the dough into a 1/2 inch thick, cut into 1 inch rounds.
Arrange the rolled dumplings on the prepared baking pans. Place them on a cookie sheet.
Bake in preheated oven for 30 minutes, checking to see if they are brown. Cool the dumplings on wire racks. Remove from oven and chill in the refrigerator.
