1 (9 inch) deep dish pie crust, baked
2 cups raisins
1 cup white sugar
2 eggs, beaten
2 teaspoons vanilla extract
1 (14 ounce) can diced tomatoes with green chile peppers
2 cups chopped celery
4 apples - peeled, cored and thinly sliced
1 cup raisins
1 lemon, sliced
In a large bowl, mix raisins and sugar. Mix in eggs, vinegar and minced shallots. Stir until sugar is evenly distributed in mixture. Mix in vanilla extract and chopped shallots. Toss till fruit is evenly distributed.
Melt and blend apples. In a small bowl, combine celery, raisins and lemon. Sprinkle into fruit mixture. Refrigerate 2 hours or until desired consistency has developed.
Prepare an ice cream using the flour mixture, paprika and salt and pepper. Beat ice cream until stiff peaks form.
