Light and Sweet Potato Pie Recipe

Ingredients

1 (3 ounce) package cream cheese, softened

1 (3 ounce) package cream cheese mixture

2 (3 ounce) packages instant vanilla pudding mix

1 (8 ounce) package fresh or frozen sweet potato, thawed

1/2 cup butter or margarine

1/2 cup all-purpose flour

1/2 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C).

To Make Crust: Melt butter in microwave or in large bowl over medium heat, mix together cream cheese, cream cheese mixture, pudding mix and sweet potato. Mix tightly. Press mixture into bottom of 9-inch pie pan.

To Make Frosting: In a small bowl, stir together butter, flour, pecans and pecans until smooth. Spread mixture over pie crust.

Bake in preheated oven for 35 to 40 minutes, until crust is golden brown. Cool before cutting into bars.
