Chicken and Zucchini Casserole Recipe

Ingredients

1 jumbo egg white

2 tablespoons butter, melted

1 zucchini, thinly sliced

1 cup cooked chicken breast halves

1 1/2 cups shredded Cheddar cheese

1/2 teaspoon ground black pepper

1 teaspoon garlic powder

Directions

Place white and butter in a shallow dish or bowl. Combine zucchini, chicken breast halves, cheese and pepper. Shape mixture into such a shape that it resembles a large shallow baking dish.

Bake in preheated oven for 20 minutes, until bottom is no longer pink. Remove platter from oven and let cool. Using a 2" round cookie jar, layer gelatin mixture over each side of chicken breast halves. Place chunks of chicken on top of jelly. Repeat with remaining ingredients. Serve hot.

Excellent! Fast and Easy and leaves lots of room for creativity. I used flax seed meal which I had in my pantry so I put it in there. It was still VERY good and I would make it over and over again. The only change I made was to use whole wheat flour and so use butter instead of oil.
