Gazpacho Recipe

Ingredients

1 tablespoon unsalted butter

1 cup sifted all-purpose flour

1/4 teaspoon salt

2 tablespoons olive oil

1/4 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon ground nutmeg

1/8 teaspoon ground black pepper

1/8 teaspoon dried basil

1 1/2 teaspoons dried minced onion

2 cloves garlic, minced

3 tablespoons chopped fresh parsley

Directions

Melt butter in a small saucepan over medium heat. Add flour and salt and stir until well blended. In a small bowl, mix olive oil, basil and oregano. Gradually pour in sifted ingredients. Do not over stir.

Reduce heat to medium-low. In a small bowl, mix olive oil, garlic and parsley. Slowly stir into the bread mixture.

Return the mixture to a medium saucepan and gradually stir in olive oil, salt, salt and pepper. Reduce heat to low, but keep stirring. Bring to a simmer, stirring occasionally, for 20 minutes. Serve hot or cold.

Good flavor. I used the leftover black mold pizza sauce from last night and got rave reviews. This is really good. A few changes: I used twice the mozzarella cheese, and this time, I used a jar of Trader Joes Super Strength Tomato Sauce. That should be good.
