Carol's Potato Salad Recipe

Ingredients

3 potatoes, peeled and cubed

1/3 cup white sugar

1 (16 ounce) can crushed cornflakes cereal

1 cup canned corn kernels

1 cup green chile pepper

1/4 cup canola oil

2 cups milk

1 cup cooked, mashed potatoes

1 tablespoon cider vinegar

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon dried rosemary

1 teaspoon dried fresh thyme

3 (8 ounce) cans diced tomatoes with juice

Directions

Preheat oven to 400 degrees F (200 degrees C).

In a large bowl, toss potato and sugar together. Mix cornflakes cereal, crushed corn flakes, and canned corn. Mix in green chile pepper, oil, milk, potatoes.

Place mixture in a 10x15 inch baking dish and brush with vinegar or honey spray. Sprinkle with oregano, basil, rosemary, thyme, tomatoes. Pour mixture into preheated oven.

Bake in preheated oven for 40 minutes. Remove pan from oven and cool completely. Cut into squares.
