1 pound ground beef
1 cup chopped onion
4 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach
8 ounces shredded Cheddar cheese
3 pounds cooked ham, diced
1 (16 ounce) container sour cream
4 ounces Swiss cheese
1 1/2 packets unsalted apple cider vinegar
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
salt and pepper to taste
In a medium skillet, brown the ground beef until no longer pink. Drain excess fat, remove the meat, and place it in a medium bowl. Stir in onions, garlic and spinach. Mix with water, tomato juice, cheese, ham, sour cream, Swiss cheese, cider vinegar, cream cheese, butter, vinegar, cream cheese, butter, lime juice, cilantro. Pour over all.
Cool completely before serving. Top with sliced cucumber slices and serve.
