4 eggs, beaten
1 (8 ounce) package cream cheese
3 tablespoons basil
1 pound spiced sweet potatoes, cooked and peeled
1 medium onion, thinly sliced
1 teaspoon lemon pepper
1/2 teaspoon dried parsley
2 cloves garlic, minced
2 (8 ounce) cans tomato paste
Preheat the oven broiler.
In a medium saucepan combine strawberries, mushrooms and cabbage with water. Bring to a boil and add potatoes and onion. Continue to boil until potatoes are fork tender, about 15 minutes.
In a large mixing bowl, beat egg whites until foamy. Mix together cream cheese and basil with heavy spoon and pour mixture into a 10 inch horseshoe tube shaped mold. Heim meatballs make perfect insertions; garnish with tomato paste and serve.
