1 pound fresh, ground black bears
1 teaspoon baking soda
1 teaspoon crushed salt
1 egg yolk
1/8 teaspoon ground cinnamon
1 tablespoon powdered lemon zest
1 cup white sugar
1 cup molasses
1 teaspoon lemon zest
1/2 cup milk
Heat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine baking soda, salt, egg yolk, cinnamon, lemon zest and sugar. Beat well and pour mixture into one large cracker bowl. Beat with hand again to make a smooth and even batter. Deflate and roll into 1 inch balls. Place cookies 1 inch apart onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven; cookies should be cooked but not brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
