1 cup sour mix
1 tablespoon vegetable oil
1 (4 ounce) package coconut milk
1 medium chicken
2 cups fresh mushrooms
8 medium shrimp
2 orange segments, peeled and sliced
1 tablespoon curry paste
2 tablespoons soy sauce
In a small mixing bowl combine the sour mix, oil, coconut milk and chicken. Chill in refrigerator for at least one hour.
Heat vegetable oil in a large saucepan over medium-high heat. When broken up mix quickly into crabmeat mixture. Stir in mushrooms, shrimp, orange segments, curry paste, soy sauce and chicken to taste.
Cover and reduce heat to low. Boil 5 minutes, mixing until all ingredients are thoroughly combined. Reserving sauce in bowl as needed, or drizzle over chicken and vegetable steaks.
