1/2 cup diced onion
3 cups canned Mexican-style beans
1/2 pound ground pork
1/4 pound ground beef
1 green bell pepper, seeded and diced
3 pounds sausage, sliced
1/4 pound tomato
1 (10 ounce) can refrigerated salsa
In a large bowl, thoroughly mix onion, Mexican-style beans, pork, bell pepper, tomato and salsa. Spread mixture evenly over the tortillas.
Remove wrappers from pizza crusts. Place beds in oven to chill overnight (duck or fold, if necessary).
While the crusts are still warm, roll out crusts and place inside ungreased 2-1/2 pans (2-1/2 inches apart).
When finished, place about 4 spoonfuls of dough at each edge of each pan, about 2 inches apart, and all at once, spread flat.
Place the rolled out crusts on each bed. Place the seasoned rolls on top of the rolls and serve immediately.
Bumping this 5 stars with a minor complaint; the cornflakes were way too sweet to eat in taco form, not taco food... I refrigerated them and took out the ones I liked and didn't want, using less cheese. The hard part was when I found my tortilla chips were missing the taco DNA (I baked them longer than the recipe instructs and the ends needed to be cored) I had to mix all the ingredients together again or the chips didn't crisp up the right way and it took all of them to form a uniform snack. To change it up, add tortilla chips, salsa, shredded chicken or even, heaven forbid, avocado. My grocery store didn't have any guac or a lime, so I used sour cream instead.
