Cocoa Tamales Recipe

Ingredients

5 1/2 cups fresh or frozen chopped peaches

1 cup white sugar

1 1/2 cups confectioners' sugar

2 tablespoons lemon juice

1 teaspoon lemon zest

1 teaspoon vanilla extract

1 cup boiling water

Directions

Place peaches in a large plastic bag. Freeze overnight or store in airtight containers for later use.

Whisk together sugar, lemon juice, lemon zest, lemon peel, vanilla, boiling water; pour into fruit bag or plastic bag. Mix and chill until firm.

In a large bowl, mix chopped peaches, sugar, peaches' liquid, lemon juice, lemon zest and lemon zest. Stir until sugar is evenly coated. Pour into freezer bag or glass container.

Place fruit in freezer bag or glass container. Freeze for 10 to 15 minutes. Remove fruit from freezer bag or glass container. Refrigerate to chill for one night or until serving.
