2 1/2 cups milk
1 3/4 cups white sugar
3 eggs
2 tablespoons buttermilk
1 teaspoon vanilla extract
1 teaspoon orange zest
1 teaspoon lemon zest
1 cup vegetable oil
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon saltine cracker crumbs
1 teaspoon ground ginger
1 cup chopped walnuts
1 cup orange juice
In a medium saucepan, warm milk and sugar over medium heat. Stir in eggs, buttermilk, vanilla extract, orange zest, lemon zest, vegetable oil, flour, baking powder, baking soda, salt, cinnamon, and saltine cracker crumbs. Bring to a boil.
Fold into boiling mixture, stirring constantly. Boil 3 minutes. Remove from heat. Stir in orange juice, and sprinkle with nuts. Pour into pan.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on a wire rack. Allow to cool completely.
