1 cup butter or margarine, softened
2 eggs
1/2 teaspoon baking soda
2 teaspoons white sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
3 cups sweet potatoes, cut into 1/2 inch cubes
1/4 cup butter, melted
1 cup white sugar

2 cups all-purpose flour
3/4 cup green sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons baking powder mixed with salt
2 tablespoons lemon juice
3 tablespoons lemon juice
1 teaspoon lemon zest
3 tablespoons lemon zester
3 tablespoons lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and margarine until smooth. Beat in the eggs one at a time, then stir in the sugar, salt, vanilla and sweet potatoes. Mix in the melted butter and sugar. Gradually stir in the flour, taking each piece of stuffing into consideration.
Pour batter into prepared cookie sheets.
Bake in preheated oven for 8 to 10 minutes; do not brown on the bottom. Remove from oven and let cool on baking sheet until set. Dust with lemon juice and lemon zest, and sprinkle with green sugar, lemon juice and lemon zest. Place cookies on cookie sheets.
