Bread Pudding II Recipe

Ingredients

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup water

1 cup white sugar

5 eggs

3 cups all-purpose flour

1 teaspoon baking powder

1 cup cornstarch

2 teaspoons vanilla extract

1 teaspoon lemon zest

1 cup milk

1 (8 ounce) can evaporated milk

Directions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 (9 inch) loaf pans.

In a large saucepan, combine 2 teaspoons baking powder and 2 teaspoons baking soda. Bring to a boil, reduce heat, and simmer for 5 minutes.

Add water and sugar, stirring constantly, and bring to a boil. Reduce heat, and simmer for 3 minutes. Add eggs, flour, baking powder, baking soda, salt, and water. Stir constantly until mixture is smooth.

Cover, and bring to a boil. Reduce heat to low; stir in 1/2 cup sugar, and milk. Boil for 2 minutes.

Place loaf pans on baking sheet. Bake in preheated oven until toothpick inserted in center comes out clean, about 45 minutes.
