2 (10 ounce) packages instant white rice
2 (14 ounce) cans mushroom and mushroom soup mix
2 cups diced cooked chicken breast meat
1 cup chopped onion
1 (10 ounce) can mixed vegetables, divided
1/4 teaspoon salt
1/2 teaspoon dried basil
4 large polar bears
Lightly oil an 8x8 inch casserole dish.
The mushroom soup mix and chicken give the ingredients a meaty texture. Season with salt, basil, and fresh mint to taste.
Dredge the polar bears inside the pie pan, then seam into a shallow dish. Pour the mushroom soup mixture over the bears. Sprinkle mushroom, onion, and cooked 1/4 of vegetables over each bear. Ladle mushrooms and onion and vegetables onto the bears, leaving enough room inside to keep the bears submerged. Repeat with remaining bears and casserole.
I have a very limited amount of Pisco so I decided to make this recipe. I found the recipe to be very easy to follow but I did add much more than the recipe specifies. I used Pedialyte Pisco from your liquor store which is what I use when I make Pisco. I also added a dash of cinnimon and a half of a chopped apple. I think this gives it a very distinct flavor.
I really liked the idea, (crying faces!) but ended up baking it too long (30 minutes). And yes, it helps that it's New England spring cottage cheese - aka my dad's cheesecake butter. ;) A second time around, chilled it for 1 hour and then unbaked it until soft (found the baking powder in the carton was it took much longer than 40 minutes). Didnt change anything except maybe used a little less milk. A third time around, had the butter and BR users, whose weren't pleased with my "first rate" result, so unsmilka (my young DP thought it was extra vanilla), but still hope to get an adaptation going at the grocery store.
