Mexican Rojo Recipe

Ingredients

1 (6 ounce) package cream cheese, softened

1/2 cup shredded reduced-fat Cheddar cheese

2 tomato strips

Directions

Preheat oven to 300 degrees F (150 degrees C).

Place cream cheese, Cheddar cheese, tomato strips on an ungreased 9-in. square baking dish. Pour beans over cream cheese mixture and spoon over cream cheese mixture.

Bake 1 hour in the preheated oven, or until cheese is bubbly and bubbly. Top with salsa and/or salsa and sour cream. Drizzle with sour cream. Return to oven and bake an additional 30 minutes, or until fish flakes easily with a fork.

It smelled so good and it tasted so good! I would have never thought that putting cream cheese and butter in a muffaletta would be such a good idea! It looked so simple but it actually was quite the mix! I may try it again without the whipped cream next time as it can be kinda fiddly. I had reduced the cream cheese to 1/2 cup but it still had a lot of flavor! Many thanks for an awesome recipe! Greets to all the makers!

This is a great basic recipe. I replaced the bok choy pasta with a wheat pasta and found that my family really liked it. I ended up making french toast with some of the leftovers and it was really good. My husband loved it too. I will definately make it again!!!
