2 3/4 cups apple juice
1/2 cup white sugar
2 teaspoons ground cinnamon
3 tablespoons all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1 egg
1 cup boiling water
1 (9 inch) unbaked pie crust
1 (9 inch) prepared chocolate cookie crumb crust
Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8 inch square pan.
In a saucepan, combine apple juice, sugar, cinnamon, flour, baking powder, nutmeg and salt. Bring mixture to a simmer; reduce heat to low. Mix egg and boiling water into apple saucepan. Bring mixture to a boil with whisk; pour over pie.
Bake in preheated oven for 45 minutes, or until toothpick inserted in center comes out clean. Cool remaining apples in pan on baking sheet. Let stand, shake and serve.
