1 cup butter, softened
1 cup white sugar
6 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons vanilla extract
2 eggs
1 cup milk
1 (3 ounce) package strawberry flavored Jell-O mix
1 cup white sugar

1 teaspoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.
In a large bowl, cream together the butter, 1 cup sugar and flour until smooth. Stir in the baking soda, baking powder, and vanilla. Mix in the eggs, one at a time, beating well after each addition. Gradually blend the flour and jelly ingredients into the creamed mixture. Pour batter into prepared pans.
Bake in the preheated oven for 45 minutes, or until a toothpick inserted in the center of the cake comes out clean. Allow to cool completely.
In a small bowl, cream together the white sugar and lemon zest until light and fluffy. Gently stir strawberry jelly mixture into whipped cream batter. Cream the top of the cake with a wooden spoon until stiff peaks form. Cool completely before removing from pan.
