1 cup butter, softened
2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract
1/3 cup packed dark chocolate chips
1 cup peanut butter
1 cup semisweet chocolate chips
1 pinch ground cinnamon
Preheat oven to 375 degrees F (190 degrees C). Prepare cookie sheets by covering with parchment paper.
In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour and baking soda; stir into the creamed mixture. Finally, stir in the rolled oats, 1/2 cup at a time, until well mixed. Drop by teaspoonfuls onto the prepared cookie sheet.
Bake for 9 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
