1 (9 inch) prepared lemon cake
4 eggs, beaten
1 (20 ounce) can crushed pineapple, with juice
4 (11 ounce) cans sweetened condensed milk
1 (9 inch) prepared graham cracker crust
Preheat oven to 350 degrees F (175 degrees C). Prepare a large microwave safe bowl or tall glass of an electric mixer with cream on low. Place 1 teaspoon baking powder in bowl. Stir with two tablespoons sugar and vanilla. Spread 2 tablespoons of baking powder mixture into pie crust. Stir in 1 cup of pineapple juice. Pour over 8 pieces of pie.
Bake for 1 minute. Reduce oven temperature to 350 degrees F (175 degrees C) and bake 16 to 18 minutes, until knife inserted in middle comes out clean.
