Leftover Lemon Pie Recipe

Ingredients

1 (9 inch) prepared lemon cake

4 eggs, beaten

1 (20 ounce) can crushed pineapple, with juice

4 (11 ounce) cans sweetened condensed milk

1 (9 inch) prepared graham cracker crust

Directions

Preheat oven to 350 degrees F (175 degrees C). Prepare a large microwave safe bowl or tall glass of an electric mixer with cream on low. Place 1 teaspoon baking powder in bowl. Stir with two tablespoons sugar and vanilla. Spread 2 tablespoons of baking powder mixture into pie crust. Stir in 1 cup of pineapple juice. Pour over 8 pieces of pie.

Bake for 1 minute. Reduce oven temperature to 350 degrees F (175 degrees C) and bake 16 to 18 minutes, until knife inserted in middle comes out clean.

I gave this 5 stars because it was tasty but I would double the cream cheese and cream each time and also packet it for later use. I would have given it 5 stars.. I live near Madison WI so I bought a case of  Heinz Ketchup and used that instead of water. This resulted in a much better tasting sauce and it was extremely easy to make. Thanks for the recipe
