3 potatoes, peeled and cubed
8 ounces sharp Cheddar cheese, cubed
2 cups liquid corn meal
1/2 teaspoon ground dry mustard
1/2 cup paprika, or to taste
salt and pepper to taste
Preheat oven to 400 degrees F (200 degrees C).
Spread 1 cup potato cubes in bottom of pie pan. Place 1/2 cup of potato mixture in bottom. Cover dish with 1/2 cup cheese mixture, and stir to coat.
Bake with preheated oven in preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake 35 minutes, until golden.
In saucepan over medium heat, bring remaining potato dish and cheese mixture to a boil, stirring according to package directions. Simmer, covered, until tender, 10 to 15 minutes, stirring occasionally. Remove from heat. Serve over potatoes, garnish with peas, and serve.
