1 small handful tomato
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
3 large green bell peppers, segmented and thinly sliced
1/2 bunch bay leaves, heated and drained
2 tablespoons olive oil
2 loaves white bread, cut into 1/2 inch slices
Preheat oven to 400 degrees F (200 degrees C).
Toast the tomato paste and half of the herb- and garlic-oil mixture over the stove, over medium heat for about 5 minutes, stirring just enough to coat.
Spread tomato paste and garlic mixture into a 2 quart baking dish. Season orange with salt until very sticky, and set aside for the last 15 seconds of the baking time.
To the same sauce, add bell peppers and bay leaves and bring to a boil. Reduce heat to medium low and simmer for 20 minutes, stirring occasionally. Garnish with 1 tablespoon olive oil and 2 loaves of bread, making 5 slices.
