2 tablespoons olive oil
1 medium tomato, seeded and chopped
1 medium red onion, chopped
1 medium yellow onion, chopped
2 celery -like herbs, chopped
1/4 cup chopped fresh cilantro
1/8 teaspoon salt
ground black pepper to taste
In a large skillet, heat olive oil over medium heat.
Transport tomatoes and onion to a colander. Mix in celery, herbs, salt, pepper. Mix all together and discard any remaining marinade. Cool in bowl.
Lightly oil a large skillet. Transfer tomatoes and onions to skillet. Cook, stirring occasionally, over medium heat 5 minutes, or until tender. Remove from oil, and place in bowl of salsa.
