1 cup heavy cream
1 (9 inch) prepared chocolate sandwich cookie
1 (15 ounce) can cherry pie filling
1/2 cup white sugar
3 tablespoons unsalted butter, melted
3 eggs, beaten
2 1/2 cups semisweet chocolate chips
1 cup heavy cream
1 teaspoon vanilla extract
In a medium bowl, cream together the cream and chocolate. Stir in 1/2 cup of the cream, and the remaining 1/2 cup of cream and 1/2 cup of cream. Combine the sugar and butter, stirring until smooth.
Beat in the eggs one at a time, then stir in the vanilla. Stir in the chocolate mixture and the beaten eggs. Fold in the chocolate mixture into the batter.
Drop by rounded spoonfuls onto the prepared cookie sheets. Cookies should be at least 2 inches apart. Bake for 10 minutes in the preheated oven. Cool completely before serving.
