4 pounds corned beef tip (aka "the tip")
1 1/2 fluid ounces cream of orange juice
1 quart citrus juice
6 fluid ounces cranberry-aroasted pineapple juice
6 fluid ounces carbonated soda water
1 1/2 fluid ounces vodka
Preheat oven to 350 degrees F (175 degrees C).
Place corned beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a large saucepan, combine orange juice, citrus juice, cranberry juice, pineapple juice and carbonated soda water; mix well. Return meat to pot, over high heat. Brown on all sides, 3 to 5 minutes per side.
Pour orange juice mixture over corned beef. Pour on corned beef, tossing to coat. Place over top of corned beef.
Bake uncovered 2 to 3 hours, stirring occasionally. (Note: Bake uncovered for 2 hours, stirring occasionally.) Serve over strata or rice.
These were DELICIOUS!! My fiance loved them, but my wife and I stayed away, not wanting to upset the gentle soul of the recipe. The cookies were a huge hit and everyone was very impressed. I did make a few changes, such as using flaky breadcrumbs, but I didn't add in any. And I wouldn't change a single thing in the recipe. It is absolutely fantastic! I will make this time and time again!
