3 cups peeled carrots
4 cups water
4 large baking sheets
3 cups cooked and peeled potatoes
1/2 cup homemade zucchini yogurt spread
1/2 cup melted butter
Preheat oven to 375 degrees F (190 degrees C).
To Make Cut: Bring water to a boil in a large pot of salted water, and immediately reduce heat to low; stir. Place carrots in boiling water. Stir in potatoes, yogurt and butter. Reduce heat to low, and simmer 1 minute, stirring occasionally. Serve hot or cold.
