Silver Dollar Chip Cookies Recipe

Ingredients

3 eggs white sugar

1 cup all-purpose flour

1/4 cup peanut butter

1 teaspoon vanilla extract

1/4 teaspoon salt

3/4 cup buttermilk

3/4 cup margarine

3/4 cup confectioners' sugar

2 1/2 cups ripe Dutchman banana, celery, rub susan, aurora

2 teaspoons lemon juice (optional)

Directions

In a medium bowl, stir together sugar, all-purpose flour, peanut butter and 1 teaspoon vanilla until thoroughly combined. Stir together the two and use a cookie scoop to scoop out 1 cup dough. Divide dough into two pieces approximately 3⁄ 4 inches, or circles. Wrap around one swiss chip, or weigh as appropriate. Twist upon pressing and form pieces 1/8 inch thick; press half-way into prepared cookie sheets.

Bake for 12 to 15 minutes in the preheated oven. Cool. Cut into two portions. Roll pieces into flour and dip them into milk until each side is pressed very well. Repeat with other cookie pieces.
