1/4 cup butter
2 tablespoons lemon juice
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon vanilla extract
1 pound skinless, boneless chicken breast halves
1 (10 ounce) can sliced ripe tomatoes
1 (6 ounce) can diced green chile peppers
1 (1 ounce) package taco seasoning mix
1 (8 ounce) can chopped green chile peppers, drained
1 (8 ounce) can cream-style corn
1 (8 ounce) container sour cream
1 cup shredded Monterey Jack cheese
Preheat the broiler.
In a medium saucepan, melt butter, and add lemon juice and garlic. Mix thoroughly. Add olive oil. Mix thoroughly. Add chili powder, vanilla extract, chicken, tomatoes, green chile peppers and cream-style corn. Mix thoroughly. Add sour cream.
Broil chicken for 2 minutes in the microwave, or until chicken is cooked through. Drain chicken, and toss with Monterey Jack cheese. Serve chicken warm or at room temperature.
