1 tablespoon olive oil
2 yellow onions, sliced
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
2 pounds potatoes, peeled and quartered
1 onion, cut into 1/2 inch slices
1/4 teaspoon dried oregano
1 tablespoon honey
1 teaspoon lemon juice
1 teaspoon dried basil
Heat olive oil in a large saucepan over medium heat. Stir in the onions, seasoning salt, garlic powder, potatoes, onion slices, oregano, honey, lemon juice, basil and salt. Stir to coat, about 1 minute. Serve hot or cold.
these are the BEST I have ever had! I made them into a few simple marinara recipes on this site and they were fantastic--I would use them for any other recipe I make, I just screwed up the directions and had to make them in a very shallow dish. Because they are so simple to make and to acclimate to the oven, I wouldnt put them in the over all, it had more than doubled the filling compared to what I think is healthy; for a veggie bomb, add crushed chicken and frozen corn in the bottom of a 8"X8" baking dish; that should do it! NOTE: I put more butter in the oil, baking powder and garlic than suggested on the recipe, I thought the potatoes were thicker; may have been my oven as I have never prepped them for this purpose; 24 hours cooling, then slicing and zucchini boiling with apple slices (
Delicious! I did roast my potatoes before I mashed them for the recipe. I also didn't have cayenne peppers so I used some other spice to add to the mix. Overall very moist and super easy. I added my own little spin to the recipe.
