I have made these for the last two Black Friday bargains I have bought and received rave reviews. I put the eggs in the blender first and scrape off the sides of the eggs with a paper toweling, this removes the extra whites and makes the egg whites more cake-like. Next I blend the egg whites until they are creamy, then add the milk, lemon juice and vanilla. I blend the mixture to make it easier to handle, but it still took a lot longer than it should have, probably because I had to use more milk and eggs. I only ended up using about a quarter of the milk and eggs, and I also added a little baking powder to keep the batter contained. I only purchased a 8" cake pan so the cake is still way too cakey for my taste. I baked the cake for 25 minutes, no need to re-work that.

My kids loved these! I substituted brownie mix for the cake mix and it turned out perfect. I didn't have any whipped cream to put on top but I have chopped up bananas and powdered sugar on top. I would swap the cake mix for something more moist (like a cake mix with eggs) and they would still be great!
