1 1/4 teaspoons dried Italian seasoning
1/4 teaspoon crushed garlic
1/4 teaspoon salt, or to taste
1 teaspoon dried Italian spice
Whisk together Italian seasoning, garlic salt, salt and Italian seasoning.
Drizzle mixture over baked potato mixture in single layer.
Pour reserved tomato paste into a small bowl and whisk until smooth.
Whisk remaining tomato paste and all vegetable and nut mixture that is in a bowl and blend into potato mixture.
Arrange potatoes in 9-inch skillet; heat olive oil for medium heat. Add Italian seasoning and garlic salt, put both sides in pot and simmer over medium-low until potatoes begin to soften.
Scrunch up potatoes and add seasoning to potato mixture and thyme. Bring to a boil and then immediately reduce heat to low, cover pot and simmer, uncovered, for 30 minutes or until potatoes are tender.
