1/2 cup unsalted butter, softened
2 cups cornmeal
1/2 cup golden raisins
4 eggs
1 teaspoon salt
1/2 cup water, divided
Preheat oven to 350 degrees F (175 degrees C). Cool.
Butter a 2 quart casserole dish. In a medium bowl combine 1/2 cup butter, cornmeal, 2 cups of the raisins, eggs, salt and water.
Combine 2 cups of raisins in the dish; thinly spread over the top of the dish.
Bake at 350 degrees F (175 degrees C) for 45 minutes.
