Oven Roasted Ham and Cheese Recipe
1/4 cup water
8 bone-in roast chicken
1/2 yellow onion, diced 2 inches thick
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried oregano
3 tablespoons tomato juice
1 (16 ounce) can Italian-style spaghetti sauce
1 1/2 cups shredded mozzarella cheese
Preheat oven to 300 degrees F (150 degrees C).
Place chicken in shallow three-inch baking dish. Place breast on rack with handle of a metal spoon. Top cavity with onions, salt and pepper. In a medium nonstick skillet, heat tomato juice over medium heat. In a medium nonstick skillet, melt mozzarella cheese. Pour hot tomato mixture evenly over chicken.
Bake in preheated oven for 45 minutes; turn and bake for 25 more minutes, stirring frequently, until cheese is melted.
